Delite Mandarin Jelly

- 2 small Delite mandarins, white pith removed and sliced into rounds
- 2tablespoons honey
- 3teaspoons powdered gelatine
- 4 scoops vanilla ice cream
- 500milliliter freshly squeezed juice Delite Mandarin juice
- 100milliliter water
Method
Step 1 of 3
Heat juice and water (or apple juice if using), in a small saucepan over medium heat to warm through, do not let it boil. Stir in the honey to dissolve, adding extra for sweeter taste, if desired. Set aside to cool.
Step 2 of 3
Place 4 x 250ml serving glasses on a tray. Place 2-3 slices of mandarin rounds in each glass. Pour over jelly mixture into each glass and refrigerate for about 4 hours or until jelly has set.
Step 3 of 3
To serve, place a scoop of vanilla ice-cream or dollop of yoghurt on top. Note: this recipe requires 3-4 hours chill time.
