  • 1tablespoons vegetable oil
  • 250grams Woolworths beef mince
  • 420grams Woolworths no-added-salt lentils, drained, rinsed
  • 100grams green beans, chopped
  • 2tablespoons mild curry powder
  • 120grams baby spinach
  • 8 slices Woolworths wholemeal bread
  • 1 Lebanese cucumber
  • 1 lemon, zested, juiced
  • 1/2 cup Woolworths Greek-style natural yoghurt

Description

Give the iconic jaffle a unique twist with a tasty curried sausage filling, offering a delightful fusion of flavours and textures in every bite.

Method

Step 1 of 4

Pick coriander leaves, then finely chop stems.

Step 2 of 4

Heat oil in a large frying pan over medium-high heat. Add beef, lentils, beans and stems. Cook, stirring to break up any lumps, for 4 minutes or until browned. Stir in curry powder and cook for 30 seconds or until fragrant. Add spinach and cup water and stir for 1-2 minutes or until wilted. Remove from heat.

Step 3 of 4

Preheat a 4-hole sandwich press. Divide curry mixture between 4 slices of bread, then top with remaining slices. Place in press and cook for 5 minutes or until golden.

Step 4 of 4

Finely chop cucumber. Add lemon juice, zest, yoghurt and half of the cucumber. Spoon into a small bowl. Top with remaining cucumber. Season with freshly cracked black pepper. Serve jaffles with raita.
