- 4 salmon fillets , skin on
- 1 bunch broccolini, trimmed
- 2teaspoons thyme leaves
- 1 lemon, wedges (to serve)
- 1tablespoons olive oil
- 1 garlic clove, thinly sliced
- 475grams classic potato mash

Method
Step 1 of 4
Place salmon, skin-side up, on a large plate. Drizzle with oil. Sprinkle with salt, to taste, and rub into skin. Place salmon, skin-side down, in a large, non-stick frying pan over medium-high heat. Cook for 5-6 minutes or until skin is crisp. Turn and cook for a further 3-4 minutes or until just cooked through. Transfer to a plate. Cover to keep warm.

Heat potato mash following packet directions. Cook broccolini in a saucepan of boiling, salted water for 2 minutes or until just tender. Drain.
Step 3 of 4
Meanwhile, add butter to pan. Cook for 1 minute or until melted and foaming. Add thyme and garlic. Cook for 1 minute or until fragrant.
Step 4 of 4
Divide mash among plates. Top with salmon and broccolini. Drizzle with butter mixture and serve with lemon wedges.
