Crispy Chickpea & Almond Nibbles

- 1teaspoons curry powder
- 2teaspoons dried oregano
- 2teaspoons smoky paprika
- 3teaspoons honey
- 420grams can chickpeas no added salt, drained and rinsed
- 2tablespoons olive oil
- 2teaspoons sea salt flakes
- 150grams blanched almonds

Step 1 of 3
Preheat oven to 180°C. Line a large baking tray with baking paper.

Rub chickpeas well with paper towel to dry. Place in a bowl with almonds. Add half of the oil and toss well to coat. Sprinkle over paprika, curry powder and 1 tsp of salt flakes. Toss well to coat. Transfer to tray and bake for 45 minutes, turning every 15 minutes, until golden. Set aside to cool.

Meanwhile, stir honey, remaining oil and oregano in a small pan over low heat. Add chickpeas and nuts and toss to coat. Return to tray, sprinkle with remaining salt and cook for a further 10-15 minutes until golden and crisp. Cool on tray. Serve.
