  • 500grams plant based mince
  • 1/4 cup vegetable stock
  • 500grams bolognese sauce, store bought
  • 1 large red onion, peeled and finely diced
  • 1 stalk celery, finely diced
  • 1 large carrot, finely diced
  • 500grams vegan white sauce, store bought
  • 200grams vegan cheese, grated
  • 1tablespoons basil, chopped
  • 1tablespoons oregano, chopped
  • 16 sheets lasagne sheets, roughly 250g
  • 20grams vegan parmesan, garnish

Description

A classic Italian lasagne but without the meat. A comfort food classic.

Method

Step 1 of 5

Pre-heat the oven to 180°C. Heat up a non-stick pan to a medium heat and fry the plant based mince for 10 minutes while tossing until the meat turns to brown.

Step 2 of 5

Set the mince to one side, wipe the pan down and now fry the onion, celery, carrot for 3 minutes while tossing. Add the herbs to the pan and fry for a further minute and then add the mince back to the pan.

Add the been stock and the bolognese sauce to the pan and allow to simmer for 10 minutes until the sauce starts to reduce.

Step 4 of 5

In a deep baking tray, layer the plant based mince with some pasta sheets, then with some vegan white sauce, then some vegan cheese.

Step 5 of 5

Repeat the layer process 3 times before placing in the oven to bake for 1 hour and serve with vegan parmesan on the side.
