  • 2 cloves garlic, crushed
  • 2 cup zucchini, grated (moisture removed)
  • 1/4 cup parsley, chopped
  • 1tablespoons lemon, zest
  • 1/4 cup parmesan cheese, grated
  • 1 pinch cracked black pepper
  • 2tablespoons olive oil
  • 500grams free range chicken mince
  • 2 cup Macro Organic tricolour quinoa
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 7

Preheat oven to 200°C

Step 2 of 7

Bring a pot of water to the boil and cook your quinoa according to packet instructions.

Step 3 of 7

Place zucchini, chicken mince, quinoa, garlic, parsley, lemon rind, salt and pepper in a bowl.

Step 4 of 7

Add parmesan until just combined.

Step 5 of 7

Season and mix with damp hands, then form into 6 patties. Chill for 30 minutes.

Step 6 of 7

In a hot frying pan, pan-fry patties in batches, 1 minute on each side until golden brown. Finish off in the oven for about 5 minutes.

Step 7 of 7

Build your burger according to taste.
