  • 5tablespoons extra virgin olive oil
  • 500grams Woolworths COOK sweet soy BBQ chicken breast steaks
  • 1 Woolworths plain mini pane di casa loaf, cut into 2cm-thick slices
  • 3 tomatoes, coarsely chopped
  • 250grams punnet Qukes® baby cucumbers, halved lengthways
  • 2tablespoons red wine vinegar
  • 1/4 bunch basil, leaves picked, coarsely torn

Description

Transform bread, chicken breast, cucumber and tomato into a flavourful and satisfying meal with this easy-on-the-wallet chicken panzanella.

Method

Step 1 of 4

Heat 1 tbs oil in a large frying pan over medium heat. Add chicken and cook, turning once, for 12 minutes or until golden and cooked through. Thickly slice.

Step 2 of 4

Meanwhile, toast bread. Set aside for 3 minutes to cool. Tear bread into coarse pieces. Place in a large bowl.

Step 3 of 4

Add tomatoes and cucumber to bread. Season. Drizzle with vinegar and 3 tbs oil. Toss until well combined. Add chicken and basil. Toss gently to combine.
