  • 500grams Woolworths large shell pasta
  • 490grams bechamel sauce
  • 400grams canned creamed corn
  • 1tablespoons Dijon mustard
  • 2 spring onions, thinly sliced
  • 1 1/3 cups shredded tasty cheese
  • 2 corn cobs, husks and silks removed
  • 1 chorizo, halved lengthways, thinly sliced
  • 360grams chicken breast fillets, thinly sliced
  • 1/4 bunch continental parsley, leaves picked, finely chopped

Description

This chicken pasta bake recipe with crispy chorizo and sweet corn is the ultimate comfort food dish. It's a tasty dinner that's perfect for a night in.

Method

Step 1 of 6

Preheat oven to 180°C/160°C fan-forced. Grease a 20 x 30cm (6cm deep) baking dish.

Step 2 of 6

Cook pasta in a saucepan of boiling, salted water for 10 minutes or until al dente. Drain. Refresh under cold water, then drain. Return pasta to pan.

Step 3 of 6

Meanwhile, place bechamel sauce, creamed corn, mustard, onion and half the cheese in a large frying pan and bring to the simmer, stirring, over medium-high heat. Add sauce mixture to pasta. Clean frying pan.

Step 4 of 6

Using a small sharp knife, remove kernels from corn cobs. Heat same frying pan over medium-high heat. Cook corn, stirring occasionally, for 5 minutes or until charred and tender. Transfer to a bowl.

Step 5 of 6

Heat same frying pan over medium-high heat. Cook chorizo, stirring, for 5 minutes or until golden and crisp. Add chicken and cook, stirring, for 5 minutes or until cooked through.

Step 6 of 6

Add chorizo mixture and half the corn to pasta mixture and stir to combine. Season. Transfer to baking dish. Top with remaining corn and remaining cheese. Bake for 40 minutes or until golden and bubbling. Sprinkle with parsley and serve.
