Add carrot to microwave-proof mug and microwave for 1 minute to soften.

Step 2 of 2

Combine remaining ingredients in a small bowl, then fold in carrot. Transfer mixture to mug and microwave for a further 1 1/2 minutes or until cooked through. Serve warm.
