  • 190grams roasted red capsicum, 1 jar, drained
  • 60grams spinach, finely chopped
  • 8 large eggs
  • 150grams goats cheese
  • 1 pinch cracked black pepper

Description

This cheesy frittata is lighter than the original with extra veggies.

Method

Step 1 of 4

Pre-heat the grill to high and place a large, ovenproof non-stick pan on a medium heat. Drizzle with oil and add the onions. Cook gently on a medium to low heat for 10-12 minutes with the lid on the pan, stirring occasionally, until slightly browned.

Step 2 of 4

Reduce the heat to low and pour over the honey, stirring well. Cook for another minute then add the roasted capsicum and spinach and cook until the spinach is wilted.

Step 3 of 4

Beat the eggs in a large bowl and season with cracked black pepper. Pour over the onion and spinach mix and cook for 5 minutes.

Step 4 of 4

Crumble over the goat's cheese and place the pan under the grill for 3-4 minutes until the eggs are set and cheese is bubbling and serve.
