- 8 slices 1cm-thick Woolworths Crafted white sourdough
- 1/2 cup extra virgin olive oil
- 2 cloves garlic , 1 halved, 1 crushed
- 320grams mix-a-mato tomatoes larger tomatoes quartered, larger tomatoes quartered
- 200grams Solanato tomatoes
- 1/2 cup pitted green olives, halved
- 2tablespoons white balsamic vinegar
- 1 bunch basil, leaves picked
- 220grams traditional bocconcini, drained, torn

Description
Take tasty caprese flavours and transform them into a delicious toast topper. This easy caprese bruschetta is the definition of brunch perfection.
Method
Step 1 of 3
Preheat a barbecue grill or chargrill pan over high heat. Lightly brush both sides of each bread slice with 2 tbs oil. Grill bread, in batches, for 1 minute on each side or until charred. Rub
1 side of each bread slice with cut side of halved garlic. Set aside.
Step 2 of 3
Meanwhile, heat remaining oil in a large frying pan over high heat. Cook tomatoes for 4 minutes, stirring occasionally, or until blistered and starting to soften. Add crushed garlic and olives, then cook for a further
2 minutes, stirring occasionally, or until fragrant. Add vinegar and simmer for 2 minutes or until reduced by half. Remove pan from heat. Finely shred three-quarters of the basil and stir into tomato mixture.
Step 3 of 3
Top each bread slice with bocconcini and tomato mixture. Scatter over remaining basil leaves and season with black pepper.
Serve immediately.
