Bread & Butter Pudding with Marmalade

- 1teaspoons vanilla essence
- 300milliliter pouring cream
- 500milliliter milk
- 90grams butter
- 2teaspoons cinnamon
- 2teaspoons nutmeg
- 6tablespoons marmalade
- 12 slice bread
- 6 eggs
- 80grams brown sugar
- 90grams sultanas
Method
Step 1 of 10
Preheat oven to 180°C.
Step 2 of 10
In a small bowl, mix the butter with the cinnamon and nutmeg and spread on both sides of the bread. Cut each slice into triangles.
Step 3 of 10
Arrange 1/2 the bread over the base of a 3L oven proof dish.
Step 4 of 10
Sprinkle with 1/2 the sultanas and 1/2 the sugar. Arrange the remaining bread on top and sprinkle the remaining sultanas and sugar.
Step 5 of 10
Whisk together the eggs, milk, cream and vanilla and pour mixture over the bread, pressing down gently to cover bread completely.
Step 6 of 10
Place dish in a roasting pan and pour in enough boiling water to come half way up the dish.
Step 7 of 10
Place in the oven and cook for 30 minutes or until custard has cooked.
Step 8 of 10
Meanwhile, warm the marmalade gently in a saucepan.
Step 9 of 10
Remove pudding from oven and gently spoon the marmalade over the top and return to oven for a further 5-10 minutes.
Step 10 of 10
Serve with ice cream or cream.
