  • 1/2 cup desiccated coconut
  • 2teaspoons ground cinnamon
  • 500grams banana bread slices
  • 1/2 cup sesame seeds
  • 1/2 cup hemp seeds
  • 2teaspoons salt flakes
  • 1 1/2 cup almonds
  • 1 1/2 cup cashews
  • 450grams Medjool dates
  • 1/2 cup chia seeds

Method

Step 1 of 4

In a food processor, pulse 11 /2 cups almonds and 1 1/2 cups cashews until finely chopped. Transfer to a bowl.

Step 2 of 4

Destone and roughly chop 450g Medjool dates, process with 500g 5 Banana Bread Slices, crumbled, 2 tsp ground cinnamon and 2 tsp salt flakes until finely chopped. Return nuts and pulse to combine. Transfer to a bowl.

Step 3 of 4

Line 2 trays with baking paper. Roll mixture into 32 walnut-sized balls and place onto trays.

Step 4 of 4

Place 1/2 cup sesame seeds, 1/2 cup hemp seeds, 1/2 cup chia seeds and 1/2 cup desiccated coconut into individual bowls. Add 8 balls to each bowl and toss to coat. Keep balls in a sealed container in the refrigerator for up to 2 weeks.
