- 500grams tomatoes, chopped
- 1 brown onion, chopped
- 1/2 cup flat-leaf parsley leaves
- 4 radishes, thinly sliced
- 2 zucchini, shredded or spiralised
- 400grams can butter beans, drained, rinsed
- 2tablespoons extra virgin olive oil
- 2teaspoons dried oregano
- 1/3 cup white wine vinegar
- 2 garlic cloves, crushed
- 100grams salad leaves
- 1teaspoons caster sugar

Method
Step 1 of 2
Heat oil in a frying pan over medium heat. Add onion, garlic and oregano and cook for 3 minutes or until softened. Stir in vinegar and sugar and season.
Step 2 of 2
Combine tomato, beans and zucchini. Toss with dressing. Place salad leaves into a bowl. Top with tomato mixture, parsley and radish.
