  • 500grams tomatoes, chopped
  • 1 brown onion, chopped
  • 1/2 cup flat-leaf parsley leaves
  • 4 radishes, thinly sliced
  • 2 zucchini, shredded or spiralised
  • 400grams can butter beans, drained, rinsed
  • 2tablespoons extra virgin olive oil
  • 2teaspoons dried oregano
  • 1/3 cup white wine vinegar
  • 2 garlic cloves, crushed
  • 100grams salad leaves
  • 1teaspoons caster sugar

Method

Step 1 of 2

Heat oil in a frying pan over medium heat. Add onion, garlic and oregano and cook for 3 minutes or until softened. Stir in vinegar and sugar and season.

Step 2 of 2

Combine tomato, beans and zucchini. Toss with dressing. Place salad leaves into a bowl. Top with tomato mixture, parsley and radish.
