- 2 leeks, white part only, thinly sliced
- 200grams swiss brown mushrooms, sliced
- 420grams can cannellini beans, drained, rinsed
- 500grams fettuccine
- 1/4 cup olive oil
- 1 bunch chives, finely chopped
- 300milliliter light thickened cream

Step 1 of 2
Cook pasta in a large saucepan of boiling salted water following packet directions. Drain and return to pan.
Step 2 of 2
Meanwhile, heat oil in a frying pan over medium-high heat. Add leek and mushroom and cook, stirring occasionally, for 10 minutes or until leek is tender and mushroom is golden. Stir in cream and bring to the boil. Reduce heat to low and simmer for 3 minutes or until thickened slightly. Stir in beans and cook for 2 minutes or until heated through. Toss through pasta with chives. Season. Serve.
