  • 100grams artichokes, store bought jar and drained
  • 1 medium red capsicum, de-seeded and quartered
  • 1 medium yellow capsicum, de-seeded and quartered
  • 3tablespoons olive oil
  • 1tablespoons balsamic vinegar
  • 1 pinch salt
  • 1 pinch pepper
  • 140grams rocket, washed and drained
  • 1 medium shallots, sliced

Description

A warm salad that has crunch and packed with smoky flavours.

Method

Step 1 of 5

Pre-heat the oven to 180°C.

Step 2 of 5

Place the cut peppers and artichokes onto a baking tray, drizzle with 2 tbs of olive oil, balsamic and spread some salt and pepper evenly.

Step 3 of 5

Bake in the oven for 15 minutes.

Step 4 of 5

Mix your rocket in a salad bowl with the chopped shallots and sprinkle 1 tbs of olive oil.

Step 5 of 5

Remove the veg from the oven and serve with the dressed rocket leaves.
