- 3 sheets frozen puff pastry
- 200grams Woolworths colby cheese
- 200grams Woolworths smoked shortcut bacon rashers
- 120grams Woolworths baby spinach
- 5mL extra virgin olive oil cooking spray
Description
These four-ingredient baked puffs, filled with a savoury blend of bacon, spinach and melted cheese, deliver the perfect combination of crunch and flavour in every bite.
Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Grease and line 2 large baking trays with baking paper. Cut each pastry sheet into quarters (squares). Chop 150g cheese into small pieces. Finely grate remaining cheese.
Step 2 of 3
Heat a large non-stick frying pan over medium-high heat. Cook bacon, stirring, for 3-4 minutes or until browned. Transfer to a plate. Add 100g spinach and cook, stirring, for 2 minutes or until it wilts. Cool slightly.
Step 3 of 3
For each puff, top a pastry square with one-twelfth of the chopped cheese, then 1tbs bacon and one-twelfth of the wilted spinach. Bring corners of pastry towards the middle to partially enclose filling. Place on prepared tray. Repeat with remaining pastry, cheese, bacon and wilted spinach to make 12 puffs in total. Spray with oil. Sprinkle with grated cheese. Bake for 20-25 minutes or until golden brown and puffed. Serve sprinkled with remaining spinach.
