Baby's Beef And Mushroom Couscous

- 1/2 onion (chopped)
- 250grams button mushrooms (sliced)
- 50grams baby spinach leaves (chopped)
- 500grams lean beef mince
- 1tablespoons extra virgin olive oil
- 400milliliter no added salt tomato passata
- 1/2 cup cooked couscous
- 1/2 cup grated tasty cheese
- 1 clove garlic, crushed
Method
Step 1 of 4
Heat the oil in a large non-stick frying pan over medium heat. Add the onion and cook for 2-3 minutes until they start to soften. Stir through the garlic, spinach and mushrooms and cook for another 3-4 minutes.
Step 2 of 4
Add the mince and continue cooking for 5 minutes until the meat is sealed. Pour in the passata.
Step 3 of 4
Simmer the mince mixture for 8-10 minutes over medium low heat until sauce is reduced. Stir through cheese then remove from heat and cool slightly.
Step 4 of 4
Place the mixture in a blender or food processor with 1/3 cup cooled boiled water and blend to desired consistency for baby’s developmental age. Stir through couscous and add a little breast milk or pre prepared formula if desired. Makes 12 baby serves
