  • 2 avocados
  • 4tablespoons mint leaves (save 2 tbs to garnish)
  • 2 limes rind and juiced, finely grated
  • 500grams low-fat Greek yoghurt
  • 1/2 cup sweet condensed coconut milk

Method

Step 1 of 4

Place mint leaves into a small bowl and cover with boiling water. Leave for 2 minutes, drain and refresh in iced water. Drain.

Step 2 of 4

Halve avocados and remove stones. Scoop flesh into a food processor. Add condensed milk, lime rind, juice and mint leaves. Process until smooth. Add yoghurt and process to combine.

Step 3 of 4

Transfer to an airtight container. Cover and freeze, stirring occasionally, for 3 hours or until almost frozen. Remove and process again until smooth. Return to the container, cover and freeze overnight or until firm.

Step 4 of 4

When ready to serve, scoop into bowls. Garnish with extra mint leaves.
