  • 125grams plain sweet biscuits, broken into pieces
  • 60grams unsalted butter, melted
  • 750grams cream cheese, softened
  • 1teaspoons vanilla extract
  • 2/3 cup caster sugar
  • 3 free range eggs
  • 1/4 cup sour cream
  • 125grams raspberries
  • 2tablespoons maple syrup

Description

Your air fryer can make a creamy, tasty cheesecake in under an hour. Top with raspberries for a flavour sensation.

Method

Step 1 of 4

Grease a 19cm-round springform pan. Line side with baking paper, ensuring paper doesn’t extend over the edge of pan.

Step 2 of 4

Place biscuits in a food processor. Process until fine crumbs form. Add butter. Process until just combined. Press biscuit mixture over base of prepared pan. Refrigerate for 30 minutes.

Step 3 of 4

Meanwhile, wash and dry food processor. Process cream cheese, vanilla and sugar until smooth. Add egg and sour cream. Process until just combined. Pour mixture into prepared pan.

Step 4 of 4

Cover pan with foil. Place pan into the basket of a 12-litre air fryer. Set temperature to 180°C and cook cheesecake for 30 minutes. Uncover and cook for a further 5 minutes or until top is golden. Turn air fryer off and allow cheesecake to stand in air fryer for 30 minutes to cool. Remove from air fryer and refrigerate overnight. Serve topped with raspberry and drizzled with maple syrup.
