  • 1/4 cup extra virgin olive oil
  • 3 lemons
  • 1.20kilograms lamb leg steaks
  • 2tablespoons oregano, very finely chopped
  • 5 cloves garlic

Method

Step 1 of 5

Zest 2 lemons and combine with 2 tbs oil, oregano, garlic and 1 tsp ground pepper. Cut lamb into 2-3cm pieces and thread onto 8 skewers. Place in an ovenproof dish and spread over marinade, turning to coat. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

Remove from fridge 1 hour prior to cooking. Remove plastic wrap.

Preheat a barbecue grill or chargrill pan over medium-high heat. Cook lamb for 6-8 minutes, turning and brushing with marinade, or until slightly charred and cooked to your liking. Transfer to a plate and set aside to rest, lightly covered with foil, for 5 minutes.

Slice remaining lemon and chargrill slices for 1-2 minutes on each side or until scorched.

Step 5 of 5

Juice 1 lemon and combine with remaining oil and olives. Drizzle over lamb and serve scattered with extra oregano.
