  • 500grams cooked fresh tiger prawns, peeled, deveined
  • 2tablespoons fish sauce
  • 1 cup snow pea shoots (or snow pea sprouts)
  • 1 long red chilli, finely chopped
  • 1 bunch coriander, leaves picked
  • 10 lychees, peeled, halved, stone removed
  • 1 eschalot, finely chopped
  • 100grams snow peas, trimmed, sliced
  • 2tablespoons fried shallots (optional)
  • 1 baby cos lettuce, leaves separated
  • 1/3 cup lime juice
  • 1tablespoons palm sugar, grated

Method

Step 1 of 3

Combine lime juice, fish sauce and sugar in a small bowl and whisk well until sugar dissolves. Add eschalot and chilli and mix well to combine. Set aside.

Step 2 of 3

Place snow peas in a bowl. Pour boiling water over and stand for 1 minute. Drain and refresh under cold, running water.

Step 3 of 3

Combine prawns, lychees, coriander leaves, snow pea shoots or sprouts and sliced snow peas on a bed of lettuce leaves. Drizzle dressing over salad, scatter with shallots, if using, and serve immediately.
