- 3tablespoons plain flour
- 2 tomato, sliced (to serve)
- 2tablespoons coriander, chopped (to serve)
- 1/2 small red onion
- 1/4 cup parsley, chopped
- 2teaspoons ground coriander
- 2teaspoons ground cumin
- 800grams canned chickpeas no added salt, drained
- 1/2 cup hommus dip (to serve)
- 1 egg, beaten
- 3 garlic cloves, crushed
- 1L vegetable oil (for frying)
- 4 small pita bread
Method
Step 1 of 3
Process chickpeas, garlic, onion, coriander, cumin and parsley in a food processor until just smooth. Transfer to a bowl and add flour and egg. Shape mixture into 8 patties and refrigerate for 30 minutes to firm.
Step 2 of 3
Heat oil in a large frying pan or heat a BBQ hotplate on medium-high. Cook falafel patties for 5 minutes each side or until golden.
Step 3 of 3
Lightly toast pita bread on the BBQ. Serve falafel on pita bread with coriander, tomato and hummus.
