  • 2tablespoons extra virgin olive oil
  • 200grams Woolworths shortcut bacon, thinly sliced
  • 1 large brown onion, finely chopped
  • 3 cloves garlic, crushed
  • 1/3 cup continental parsley leaves, finely chopped
  • 300milliliter pure cream
  • 3 free range eggs
  • 1 cup finely grated parmesan

Description

Pasta carbonara is the ultimate comfort food and this recipe will have you making the rich, creamy Italian delight in just 25 minutes.

Method

Step 1 of 3

Cook pasta following packet directions until al dente. Drain well.

Step 2 of 3

Meanwhile, heat the oil in a large frying pan over medium heat. Add bacon and onion. Cook, stirring, for 8 minutes or until bacon is golden. Add the garlic and cook for a further 2 minutes.

Step 3 of 3

Whisk cream and eggs in a bowl. Stir in half of the parmesan and season with salt and pepper. Add bacon mixture and cream mixture to hot pasta and toss to combine. Stir through parsley and serve immediately sprinkled with remaining parmesan.
