- 1/4 cup sultanas
- 2tablespoons icing sugar
- 5milliliter virgin olive oil spray
- 1/2teaspoons ground cinnamon
- 1/3 cup thick custard
- 8 sheet sheets filo pastry, thawed
- 770grams apples, sliced
- 4 scoops vanilla ice cream (or custard to serve)
- 2tablespoons brown sugar
- 1/4 cup dried apricots, diced

Method
Step 1 of 5
Preheat oven to 200°C. Line a large baking tray with baking paper.
Step 2 of 5
Combine apples, sultanas, apricots, brown sugar, custard and cinnamon in a bowl.
Step 3 of 5
Place a filo sheet on a flat work bench. Spray with oil spray and top with another sheet. Repeat with remaining sheets.
Step 4 of 5
Spoon apple mixture along one long side leaving 5cm on each end. Fold ends in and roll up enclosing filling. Transfer to prepared tray. Spray strudel with oil.
Step 5 of 5
Bake for 20-25 mins or until golden and firm to the touch. Cool slightly before sprinkling with sugar. Slice and serve with remaining custard and cream or ice-cream.
