- 4 free range eggs
- 2tablespoons reduced-fat milk
- 1/4 cup light tasty cheese
- olive oil
- 1/2 cup mixed fresh herb leaves, roughly chopped
- 2 spring onions, thinly sliced
- 2 cup spinach leaves
- wholemeal bread, toasted (to serve)
Description

Method
Step 1 of 3
Whisk eggs, milk and cheese in jug until combined. Season with pepper.
Step 2 of 3
Spray a 24cm frying pan with oil and heat over medium-low heat. Pour in half the egg mixture and tilt pan to evenly coat base. As the edges set, lift with a spatula to allow uncooked egg to run underneath. Cook for 1 minute. Scatter over half each of the herbs, onion and spinach. Transfer to a plate. Repeat with remaining egg mixture, herbs, onion and spinach.

Serve omelettes with bread.
