Description

This carbonara recipe is deliciously creamy and so easy to make. Whip it up in less than 30 for the perfect midweek meal.

Method

Step 1 of 4

Combine egg and parmesan in a small bowl.

Step 2 of 4

Cook pasta in a large saucepan of boiling salted water according to packet instructions. Drain, reserving 1/2 cup cooking liquid.

Step 3 of 4

Heat oil in a large, deep frying pan over medium heat. Add pancetta and cook for 4 minutes or until light golden. Add pasta to pan, then remove pan from heat. Gradually add egg mixture with reserved cooking liquid, stirring frequently for 2 minutes or until mixture thickens and a sauce forms.

Season with pepper, then serve immediately sprinkled with parsley and extra parmesan.
