- 2 small (very ripe bananas)
- 1/4teaspoons bicarbonate of soda
- 2teaspoons honey
- 120grams baby spinach leaves
- 1 1/3 cup wholemeal plain flour
- 1 free range egg
- 1/2 cup vegetable oil

Method
Step 1 of 3
Preheat oven to 180°C. Line a 12-hole muffin tray with paper cases.
Step 2 of 3
Blend spinach leaves in a blender until finely chopped. Add bananas, vegetable oil, egg and honey, blending until smooth. Transfer to a bowl and stir in milk, flour, baking powder and bicarbonate of soda.
Step 3 of 3
Spoon into cases. Bake for 25 minutes or until cooked and golden.
