Tips:
PREP: Remove meat from fridge and rest it to room temperature before cooking.
SEASON & SEAR: Lightly oil and season well with salt & pepper. Sear in a hot pan to seal in the juices.
REST: Before serving, rest meat for a more tender and juicy experience.
Method:
1. Let roast sit uncovered at room temperature for 1 hour. Preheat oven to 200C (180C fan forced).
2. Lightly oil and season well with salt & pepper. Tip: marinade roast in olive oil, garlic, rosemary & thyme.
4. Place roast in a roasting pan fitted with a roasting rack. Roast for 25 minutes per 500g for a medium roast (recommended) or until your liking.
5. Remove from oven, cover with foil, let rest 20 minutes before serving.
Level of Doneness:
Roast:
Rare: 20 minutes per 500g, rest for 20 minutes
Medium: 25 minutes per 500g, rest for 20 minutes (recommended)
Well Done: 30 minutes per 500g, rest for 20 minutes
