For the glaze
  • 1tablespoons Chinese hot chilli sauce
  • 1/2teaspoons salt
  • 2 lemongrass stalks, tender stalk only, finely chopped
  • 1tablespoons runny honey
  • 2tablespoons sesame oil
  • 1tablespoons sunflower oil
  • 2tablespoons light soy sauce
To garnish
  • 2tablespoons sesame seeds
  • 350grams beef fillet, 2.5cm thick
  • 1teaspoons freshly ground black pepper
  • 4 spring onions, white stalk only
  • 1 red capsicum, halved and seeded
  • 1/2tablespoons oil

Description

This is a real treat, using tender beef fillet marinated in hot chilli sauce,sesame, lemongrass, and honey. Sear briefly to serve rare.

Method

Step 1 of 4

Cut the beef into 20 cubes. Cut the spring onions diagonally into 20 lengths. Cut the capsicums into 20 pieces.

Step 2 of 4

For the glaze, combine the lemongrass, honey, oils, soy, chilli sauce,and salt and pepper in a non-metallic bowl. Add beef, spring onions, and capsicum. Toss to coat each piece well. Cover and refrigerate for at least 1 hour.

Step 3 of 4

Thread 1 piece each of spring onion and pepper and 1 beef cube on to each presoaked skewer.

Step 4 of 4

Preheat grill. Alternatively, preheat a heavy frying pan with oil. Either Grill or sear beef skewers until browned but still pink and juicy inside, 3 minutes on each side. Sprinkle with sesame seeds and serve hot.
