- 550grams lean pork, cut into 2cm cubes
- 6 cloves garlic, crushed
- 1tablespoons chilli flakes
- 1tablespoons ground fennel seeds
- 1tablespoons paprika
- 1 lemon, juice and zest
- 3tablespoons fresh flat-leaf parsley, finely chopped
- 1tablespoons dry sherry
- 2tablespoons olive oil
- 1 pinch salt
- 1 pinch freshly ground black pepper
Method
Step 1 of 2
If using wooden skewers, soak them in cold water for 30 minutes before using. Put all the ingredients in a mixing bowl, combine well, then leave to marinate for at least 30 minutes.
Step 2 of 2
Thread the pork onto the small skewers or cocktail sticks and cook in a hot frying pan or griddle pan for 10 minutes, turning frequently. Leave to rest for 10 minutes, then serve with a mixed salad.
