  • 250grams fine bulgur wheat
  • 1 lemon, juice only
  • 125grams soft goat's cheese, crumbled
  • 5milliliter extra virgin olive oil
  • 1 1/4 cup vegetable stock, hot
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 bunch spring onions, finely chopped
  • 1 orange capsicum, deseeded and diced
  • 1 yellow pepper, deseeded and diced
  • 1 pinch mild paprika
  • 1 handful fresh mint leaves, finely chopped

Method

Step 1 of 2

Put the bulgur wheat in a large bowl, and pour over the stock - it should just cover the bulgur. Leave to stand for 10 minutes, then stir with a fork to fluff up the grains. Season well with a pinch of salt and black pepper.

Step 2 of 2

Add the spring onions, orange and yellow capsicums, paprika, mint, and lemon juice, and stir well. Taste, and season again if needed. To serve, top with the goat s cheese and a generous drizzle of olive oil.
