Description

This simple soup is prepared with a ready-made broth in Spain - leftovers from one of the bean soups popular at midday, flavoured with diced Serrano ham and parsley, and with hard-boiled egg.

Method

Step 1 of 2

In a large pan, bring the broth, rice, and ham to the boil. Reduce the heat and simmer for 15 minutes, or until the rice is nearly tender.

Step 2 of 2

Add the eggs and simmer for a further 1 minute. Remove from the heat, then stir in the parsley and mint, if using. Serve piping hot.
