Peanut butter cheesecake strawberry bites
These bite-sized snacks are big on fruity flavour and crunchy peanut goodness, and feature the added protein and calcium power of cottage cheese. If you’re preparing them in advance, try using ice-cube trays to stand each filled strawberry up in – depending on their size, you might even be able to fit two to a hole. Then pop them in the fridge until you’re ready to watch them disappear!

Crunchy barbecue air-fryer chickpeas
Chickpeas are cheap, versatile protein powerhouses. These super-tasty nibbles are perfect to serve with drinks or to snack on at any time. No air fryer? Use the recipe as your guide, but then spread the chickpeas over a lined baking tray and bake in a preheated 200°C oven, turning occasionally. Once they’ve cooled completely, store them in an airtight container to keep them crisp.

The batter and breadcrumb combination works well as a coating for a variety of veggies, such as cauliflower florets, whole green beans, pumpkin slices or even mushrooms. If you don’t have panko, you can substitute regular dried breadcrumbs.

This zingy recipe is endlessly variable; use whatever fruit’s in season (or in your fruit bowl). If there are chilli-averse members of the family, simply serve the dressing separately, so everyone can help themselves, and feel free to arrange the fruit on a single platter instead of individual glasses. A few small mint leaves would make a fragrant addition, too.
