Poached Chicken Breast Chinese Style

Poached chicken breast Chinese style

Ingredients:

  • 2 cups chicken stock
  • 1 cup salt reduced soy sauce
  • ¾ cup brown sugar
  • 4 green shallots, thinly sliced
  • 2 garlic cloves, bruised
  • 3cm piece fresh ginger, sliced
  • 2 star anise
  • 2 cinnamon sticks
  • 4 chicken breast fillets
  • 2 bunches asparagus, trimmed
  • 2 tsp sesame oil
  • 2 tsp toasted sesame seeds

Method:

  1. Combine chicken stock, soy, brown sugar, green shallots (reserving 2 tbs), garlic, ginger, star anise and cinnamon sticks into a large deep frying pan over a medium heat. Add 2½ cups water, and stir until sugar has dissolved and mixture comes to the boil.
  2. Reduce heat to low and add chicken breasts. Cook for 10-12 minutes or until chicken is cooked through. Remove chicken to a bowl with a slotted spoon. Cover to keep warm. Slice and serve on asparagus.
  3. To cook asparagus, bring a frying pan of water to the boil. Add asparagus and cook for 1-2 minutes or until just tender. Drain. Return frying pan to a medium heat and add asparagus. Add sesame oil and sesame seeds. Toss until combined.
